Spalting is a unique color pattern that occurs when turkey tail and other mushrooms begin to colonize the wood. Sometimes, it is deeply spalte. This section just has a bit of light spalting ont he spoon, but the turkey tails gave the wood a beautiful, almost caramelized color. This is a very pretty cooking set that is comfortable int he hand. No two spalted sets are the same. Without the spalting, you could barely see it. As the turkey tail mushroom colonizes a tree, it caramelizes the sugars int he wood. This is what gives spalted wood such striking colors. I was especially impressed by the way the grain seems to spiral around the handle. What makes carving spalted wood so interesting is that you never know what you will find once you split a log.
